The ingredients needed to make Ripe Jackfruit Dosa:
  1. Take 1 cup Rice
  2. Make ready 1 cup Ripe Jackfruit (chopped)
  3. Prepare To taste Jaggery
  4. Make ready 2 pods Cardamom
  5. Make ready 1 cup Cardamom Rice -
  6. Prepare 2 Tbsp Grated Coconut
  7. Prepare 1 pinch Salt
Steps to make Ripe Jackfruit Dosa:
  1. Wash and soak the rice for 1-2 hours.
  2. Remove the jackfruit pods, separate the seeds and tear them roughly.
  3. Drain the soaked rice and grind it with salt (2 rounds).
  4. Now add jaggery, torn jackfruit pieces and cardamom pods. Some add the grated coconut at this stage; some like to add it to the batter to give it a nice texture (you can even cut the coconut into pieces and later add them to the batter). Grind to a fine paste and check for its sweetness. If desired, add more jaggery and grind further.
  5. Now transfer this paste to a bowl and add coconut (if not added earlier) and mix well. Add water in small quantities to get a thick batter of pouring consistency (the batter has to be used immediately or can refrigerate it, but will not be that good).
  6. Heat the tawa on a medium flame. When hot, pour a ladel full of batter and spread it slightly (these dosas are generally thick and soft. They need to be cooked on a gentle heat because it will burn on a high heat due to jaggery).
  7. Flip it, once done (i.e. first side golden brown and the other side with golden-brown spots) transfer it to a plate and serve it immediately with some ghee (optional).
