The ingredients needed to make Stuffed Shepherds:
  1. Get 2 tsp butter/margarine
  2. Prepare 140 grams minced beef
  3. Get 250 ml beef/vegetable stock
  4. Get 1 tbsp Worcestershire sauce
  5. Get 1 tbsp Tomato puree
  6. Make ready 1 large Jacket potato (baked)
  7. Get 1 pinch Grated cheese
  8. Get 1/2 Onion (chopped)
Steps to make Stuffed Shepherds:
  1. Heat oven to 200ºC/180ºC/gas mark 6
  2. Melt half the butter in a pan and cook the onion for 3-4 minutes
  3. Add the mince and fry for a further 3-4 minutes or until mince is brown
  4. Stir in the stock, Worcestershire sauce, tomato puree and seasoning. Simmer for 15-20 minutes until mince is tender and the sauce has thickened.
  5. Cut the jacket potato's in half. Scoop out the flesh leaving the skins intact.
  6. Mash the potato with the remaining butter and season.
  7. Load the skins with the mince and cover with the mashed potato. Sprinkle a little cheese on top.
  8. Bake for 15-20 minutes until golden. Serve with your favorite green vegetable.
