- Sprinkle over the pepper, salt and oregano and stir to mix.
- Make gaps in the zucchini ham mix to create pockets and crack the eggs in these pockets. Scramble the egg whites into the mix without breaking the yolks. When the whites are firm break the yolks add scramble these into the mix. As soon as the yolk is set serve on warm plates.
