The three key elements for toasted muesli (granola) are oats, oil and a sweetener. Changes include: adding a method to make clumpy granola without adding more sweetener or fat, for the loose granola, adding the dried fruit at the end which ensures none of it burns (sometimes, some fruit on the surface can get a little too brown). Mix all the dry ingredients, including the dried fruit, in a bowl until well combined.

- Get 170 gr. rolled oats

- Prepare 100 gr. pumpkin and sesame seeds (or sunflower, linseed, flax…)
- Take 100 gr. dried fruit cranberries ( or apricots, dates, raisins, goji etc.)
- Prepare 120 ml. runny honey
- Make ready 40 ml sunflower oil
I became hooked on muesli several years ago, when my husband and I spent a few months in England working on a project he was involved with. I adapted this easy-to-make granola from the first Harrowsmith cookbook (I made a big reduction in butter and it still works). Because we have a houseful of people, I usually double the amounts shown here. If you feed a crowd, too, make sure you have a large enough pan.
Instructions to make Home-made granola (toasted muesli):
- Chop the nuts
- Put all the dry ingredients into a large bowl
- Heat the oil and honey over a low heat, and when they are nicely blended, pour over the dry granola ingredients. Stir while heating and don't allow to get hot enough to bubble
- Mix very well with a spoon or with your hands
- Lightly grease your oven tray and fill with the granola. Smooth over with your hands so there are no gaps
- Put in the oven for 35 minutes at 150º. Each ten minutes, carefully take the tray out and stir around a bit.
- After half an hour it should be ready to take out of the oven and left for 10 minutes or so in the tray to cool
- Put the granola into a bowl, add the dried fruit of your choice and stir well
- Store in an airtight jar and enjoy :-)
UPDATE: At an exchange student's request, we. Thanks- I prefer a non toasted muesli but found it a great recipe & just omitted the oil & honey. After all honey can be added at the table with fresh fruit & yoghurt. Great to have included information such as the benefit of cinnamon.. Toasted muesli (granola) adds sugar, oils etc…not as healthy as muesli.
