Steps to make Gnocchi:
- Parents - You can boil the potatoes before hand and leave them to cool down a bit. If you peel them before hand it’s probably easier and the smaller the pieces of potato the faster they cook. Put a fork through them and when there is no resistance they are ready.
- Smash the potatoes and add an egg to it.
- Start to add the flour, it will never be like a bread dough, it will be stickier and more wet but you need to get to a point where you are able to get the dough into little sausages ready for cutting
- Meanwhile put a large pot to boil with a handful of rock salt in it.
- Cut the gnocchi in even size. You can add a nice pattern to it with a fork or wooden tool but I didn’t bother this time. If you need to let them on the side for a while before cooking make sure you add a lot of flour.
- Start to add the gnocchi to the pan, bear in mind that you will need to make multiple batches, they need to be evenly spread in the pan so that they don’t stick on top of each other. They cook really quick within a few minutes, when they float they are ready, take a spoon or spatula with holes in it and scoop them out
- Here we made them with a simple tomato sauce but you can make them in many ways, with butter and sage is my favourite or ragout or cream and ham, ricotta and spinach… lots of options!!
