This Fruit Cake recipe is adapted from Nigel Slater's excellent 'The Kitchen Diaries' and it is by far the best one I have ever made. Instructions to make Fruit cake:
  1. Pour dried mixed fruit into a bowl then pour over brandy/rum. Allow to soak for at least 6 hours.
  2. When ready to bake, set oven to 180 degrees centigrade. Butter an 8inch pan and dust with flour.
  3. In a saucepan, put butter, sugar, 150ml rum or brandy (water can be used as an alternative) and mixed fruits. Set on medium heat to simmer for 10 minutes. Cool for 15 minutes.
  4. Beat eggs and pour into sugar/fruit mixture. Stir. Add baking powder and mixed spice into flour. Pour into sugar fruit mixture and stir until mixed in.
  5. Leave cake in the pan to cool for at least 20 minutes. Turn out from pan and allow to cool. Wrap cake and feed with brandy once a week.
  6. Spoon batter into pan and bake until cake is done (when a toothpick inserted in the middle comes out clean)
