  2. Optional: cut up beef in tiny pieces and place in pressure cooker or regular pot with ~1 cup water. Add salt and pepper and cook at medium heat.
  3. Cut onions in pieces using food processor
  4. Fry cut onions in a pot with a little added canola oil. Cook at mid-high heat
  5. Place handful of vermicelli in 2nd pot. Fry using just enough canola oil to soak them. Cook on medium heat
  6. When vermicelli begin to turn brown, add the rice (after being drained) and 3 cups of water (or enough to cover rice). Cook at low heat until soft
  7. Place beef in pot with fried onions
  8. Drain 3 cans of red kidney beans from their liquid and add to 1st pot
  9. Mix tomato paste with 1 cup water (or juice from beef pot) and add into pot. Cook at low heat for ~10mins
  10. Add salt as needed

However I think this has potential but like other reviewers said too dry. I didn't do any research on what red beans and rice is supposed to look like when my husband requested it (it's saucy!), and went straight to this recipe. Stir in kidney beans, onion powder, salt, pepper, and hot sauce. Reduce heat to low and let mixture simmer slowly while you cook the rice. Fold rice and beans gently together and transfer to a serving dish.
