Sukhdi recipe - Authentic Gujarati sweet made with jaggery (gur or gol), ghee (clarified butter), and atta (whole wheat flour). Sukhdi has soft, crumbly and melt-in-your-mouth texture. SUKHDI also know as GOLPAPDI (Gol means jaggery and papdi means a thin layer) is a traditional sweet from the state of Gujarat.

To get started with this particular recipe, we have to first prepare a few ingredients. You can cook sukhdi using 4 ingredients and 10 steps. Here is how you can achieve it.

The ingredients needed to make Sukhdi:
  1. Make ready 2 cups whole wheat flour
  2. Prepare 1 cup coarsely grinded wheat flour(Bhakhri atta)
  3. Prepare 1 cup jaggery
  4. Prepare 1 1/2 cup ghee (clarified butter)

Steps to make Sukhdi:
  1. Mix both types of flours in a wok(kadai) and dry roast them until it's mildly golden brown in colour.1. Stir continuously on low medium flame. Once you feel that the flour has become a bit lighter and smooth, take it off the stove and transfer to another vessel so that it doesn't get burnt because of the hot wok (kadai).
  2. Note: Keep jaggery ready now. If you are using a soft jaggery (unprocessed Jaggery, which is liquidy dark brownish), Sukhdi will be better. If you are using regular white jaggery, make sure to crush it into powder or small pieces before starting the process.
  3. Put the same empty wok or another one on the stove. Add ghee in the wok(kadai). Keep the flame low medium at this stage.
  4. Once ghee melts completely, add jaggery in it.
  5. Ghee should be lukewarm, neither too hot nor too cold. Now reduce the flame to minimum and once jaggery melts and no pieces are left, take it off the stove. - TIP Critical: This process needs lots of care and attention. Because, if by any chance if jaggery is on stove for long time, Sukhdi will be too hard to eat.
  6. Now add the roasted flour in it and mix fast and evenly.
  7. Transfer to a thaali(flat steel plate with edges) and press it with the reverse side of a steel bowl. For a meat finishing press the borders with a steel tavetha(steel flat spatula). Let it cool down for maximum 5 minutes. Then make the pieces with knife of desired shape(square or diamond) and size. After that, let it cool completely.
  8. Sukhdi is all ready! Store Sukhdi in a container. You can store it even for a month.
