- Prepare 3/4 cups Basmati Rice

Ghee Rice or nei chor as it is commonly called is a famous delicacy of south India and is extremely easy to make. It is a speciality of the Malabar coastal region in Kerala. The rice is roasted in ghee with cardamom, cloves and cinnamon and cooked to perfection and finally garnished with roasted cashews. This is the Malabar version of making ghee rice, which is called 'nei choru' in Malayalam.
Steps to make Malabar Nei Choru/ Ghee Rice:
- Clean and soak rice for 30 minutes. Drain excess water and keep it aside
- Heat 2 tbsp ghee in a pan,fry cashews until golden brown, keep it aside.
- Now add raisins and saute until puffed up. Drain and keep it aside
- Now add the onions in same pan. Saute onions until crisp and brown. Drain and remove the onions. Keep it aside
- Add 1 tbsp ghee in same pan. add all whole spices and saute until aromat
- Add rice and saute for 3-4 minutes.
- Add water with salt and mix well. Water should be slightly salty
- Simmer, cover and cook until water is absorbed and rice is done
- Gently fluff the rice. Garnish the rice with fried cashews, onions, raisins and coriander leaves.
- Serve warm with curry and raita
The only variation to my recipe is that I used a cup of milk in addition to water to get a creamier and richer consistency. But you can make it omitting the milk and just adding water.
