- Roast the Fried Rava in a pan with two tablespoons Ghee and keep it aside.
- In the remaining ghee, Add cashew nuts, raisins and carrots and stir well. Then, keep them aside.
- Take another utensil and pour cooking oil. Sauté the shallots, chillies, curry leaves, mustard and ginger in it. When the shallots are brownish, add two bowls water.
- Let the water boil. Add pinch of salt while water gets boiled. Now add the Rava and let it cook till water is completely absorbed.
- Now add the carrots, cashew nuts and raisins and stir well.
- You can optionally pour two teaspoons ghee over the Upma when you serve it. You can also use other vegetables instead of carrot.
