  6. Prepare 20 g (1 inch) Galangal

  9. Prepare 1 cup light coconut milk
  10. Prepare 3 Kaffir Lime Leaves
  11. Prepare 2 pc Tamarind slices (asam keping)
  12. Prepare 1 Tbsp Palm Sugar
  13. Take 3 Tbsp Cooking Oil
  14. Get Salt to taste (4g or less)
  15. Take Optional;
  16. Take 1 stick Cinnamon
  17. Get 2 pc Star Anise
  18. Make ready 3 pods Cardamom
Instructions to make Chicken Gulai:
  1. Blend shallots, garlic, dried chilies, ginger, galangal, turmeric and lemongrass into a paste.
  2. Add oil to wok and heat up until hot. (Fry the cinnamon, cardamom and star anise here). Fry the paste until the oil separates. Add chicken and cook well (about 5 minutes both sides).
  3. Add the coconut milk, tamarind slices and salt and palm sugar. Cook until the liquid is reduced to a desired consistency or until dry.
